Easy Healthy Desserts When Not Traveling
I don’t know about you, but when I’m traveling I don’t really keep track of what I’m eating. Or at least, I don’t care to. You’re on VACATION! You shouldn’t have to think.
Anyway, while you’re at home here are the courses you can take from Happy Bellyfish. I chose to take the Easy Healthy Sugar-Free Desserts course from Anastasia because diabetes has run in our family and honestly, our teens like to eat sweets and I was searching for healthy alternatives.
Set Up
First thing I did was to decide on which recipe I wanted to make from the course. It was hard to decide because they all look great and all are easy healthy desserts. However, I narrowed it down to the lemon bites. Make sure you have all the equipment you need! If you do, you’ll be more organized and less messy in the kitchen. And I CAN be messy!
Here is a tip! If you don’t have a zester, as I do, use a sharp serrated knife. Be careful!
Start Making
Once I had all the ingredients & equipment I needed, I was ready to make this easy healthy dessert! Try not to lick the spoon and/or bowl. You are, after all, trying to be good from all your travel eats!
A great thing about this recipe and MANY of the recipes in this course is that they are NO BAKE RECIPES! I absolutely love that!

These may look the same as when they went into the refrigerator, but they have set and are ready to eat! They came out delicious and because I have teens, they didn’t last long! Ok, let’s face it, I ate quite a few, too!
